Smooshed New Potatoes

These will become your new, absolutely irresistible, go-to potato dish!

Ingredients:

  • new red bliss potatoes (2-3 per person)
  • butter or olive oil
  • salt & ground pepper to taste
  • shredded cheddar cheese – optional
  • crisp bacon bits – optional

Place new potatoes into a pot of lightly salted water to cover, counting on at least 2 or 3 per person.  Bring to a boil and boil for 12 minutes until fork tender.

(if I am baking a meatloaf or roast, I just oil the washed/dried potatoes and arrange them in the baking pan until fork tender…then remove them from the roasting pan and proceed with the recipe…the smooshing etc).

Preheat oven to 450 degrees.

Now place potatoes on a parchment lined baking sheet, and using a mallet or small saucepan, smoosh each potato almost flat.  Drizzle the potatoes with olive oil or a speck of butter, sprinkle with salt and ground pepper.  Sprinkle with shredded cheddar cheese and/or crisp bacon bits if desired.

Bake for about 12 to 15 minutes until golden brown and sizzling.
